Lemon & Herb Chicken

Heat oven to 350 F. Place the chicken in a baking dish
- 2 boneless, skinless chicken breasts
- Juice of half a lemon
- 1/2 lemon sliced
- 3 cloves garlic, minced
- 1/4 yellow onion, sliced
- 1 t. dried basil
- 1 t. dried oregano
- 1 t. dill
- pinch of salt
- pinch of pepper
Yellow Curry Chicken

In a large pot, heat oil over medium high heat
- 1 lb chicken breast, diced
- 2 T. coconut oil
- 2 shallots, chopped
- 4 cloves garlic, minced
- 1 large carrot, sliced
- 1/2 bundle of asparagus, chopped
- 2 T. fresh cilantro, chopped
- 6-8 fresh basil leaves, chopped
- 3 T. Sun Brand Madras Curry Powder
- 14.7 can coconut milk
Red Curry Pork

Place all ingredients in a crock pot and cook on low heat for 5-6 hours
- 4-5 lbs bonelss pork ribs
- 14.5 oz can organic stewed tomatoes
- 14 oz can coconut milk
- 1/2 yellow onion, chopped
- 1 large chopped carrot
- 3-4 cloves of garlic, minced
- 2 " piece of fresh ginger (minced)
- 1 T. curry powder
- 1 T. ground cumin
- pinch of salt and pepper
- 2 t. - 1 T. Frank's Red Hot (optional depending on desired heat) - chili flake can also be used
Blueberry Strawberry Salad

Mix berries, nuts, mint, lemon juice and zest, and vinaigrette
- 1 cup sliced strawberries
- 1 cup blueberries
- 1/4 cup chopped pecans
- A few springs of chopped mint
- juice and zest of a lemon
- 2 T. raspberry vinaigrette
- 1 cup spinach
- 1 cup baby greens
Autumn Spice Roast Beef

Place the roast in a roasting pan on a rack (fat side up)
- 4-5 lb rump or round roast
- 2 T. autumn spice
- 1/4 t. salt
- 1/4 t. pepper
- 4 cloves garlic, minced
- 1/2 yellow onion, chopped
Parmesan Almond Salad

Mix olive oil, balsamic, and pepper
- 3 cups arugula or mixed greens
- 1/4 cup Marcona almonds
- 1/2 cup cherry tomatoes
- 1 avocado, chopped
- 1/2 cup Parmesan cheese
- 3 T. olive oil
- 3 T. white grape or aged balsamic vinegar
- pinch of pepper
Chicken, Artichokes & Fire Roasted Peppers

Place all ingredients in a crockpot and cook on low for 4-6 hours
- 2-3 lbs bonless, skinless chicken thighs or chicken breasts
- 8 oz pkg artichoke hearts
- 3 fire roasted red peppers, diced
- 3 cloves garlic, minced
- 2 shallots, sliced
- 2 t. oregano
- 2 t. rosemary
- 2 pinches of sea salt and pepper
- 2 T. kuzu root (or other thickener) dissolved in a little cold water
Cilantro Lime Vinaigrette and Marinade

Place all ingredients in a blender or food processor and pulse to combine
- 1/4 cup olive oil
- 1/4 cup champagne vinegar
- Juice two limes and zest of one
- 1/4 cup fresh chopped cilantro
- 2 cloves minced garlic

- 2 (12 oz) cans low evaporated milk or low fat coconut milk
- 1 c. 2% milk
- 2 whole eggs
- 1 c. egg beaters
- 1 T. cinnamon
- 1 c. brown sugar
- 2 c. blueberries
