Thai Ginger Soup

- 36 oz chicken breast, cooked and shredded
- 64 oz Swanson Thai Ginger Infused Broth
- 3 cloves garlic, minced
- 3 medium carrots, peeled and sliced
- 1 large red bell pepper seeded and sliced
- 8 oz sliced water chestnuts
- 11 oz coconut milk
- 1/8 cup chopped green onion
- 2-3 T. fresh chopped cilantro
- 2-3 t. crushed red pepper (to taste)
- 2-3 T. fresh chopped basil (or 2 t. dry)
- Pinch of pepper
- Juice of one lime
- (Swap out or add other veggies or mushrooms if you like)
Lemon Dill Talapia

- 2 tilapia fillets (or other white fish)
- juice and zest of a lemon
- salt and pepper
- 1 T. dil
- 2 t. onion powder
- 2 t. garlic powder
- Lemon Dill Sauce (optional)
- 1/4 cup low fat or fat free mayo
- juice and zest of half of a lemon
- 1/4 t. dill

Pear and Walnut Salad

Mix the lettuce, spinach, and walntus
- 1 large pear sliced
- 2 cups romain lettuce
- 1 cup spinach
- 1/4 cup candied walnuts (see recipe) - if you are watching sugars, you can replace with warmed nuts
- 1/4 cup sliced gouda cheese
- Pear vinaigrette (see recipe)
Lemon Coconut Bars

Preheat oven to 350 F. Grease a 9x9 baking pan
- Icing:
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 t. vanilla extract
- 1 egg
- Juice and zest of one large lemon
- 1/4 t. salt
- 1/2 t. baking powder
- 1/2 t. baking soda
- 1 3/4 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsweetened coconut flakes
- 1/2 cup chopped pecans
- 1 cup powdered sugar
- 1/4 cup lemon juice
Raspberry Zinger Cheesecake

For crust: Press cookie crumbs in bottom of springform pan that has been sprayed with cooking spray

- 10 vanilla cream cookies, crushed

- 24 oz cream cheese
- 1 cup sour cream

- 2 t. vanilla
- 1/8 t. salt
- 1/8 cup meringue powder
- 1 t. coconut extract
- 1/4 cup raspberry flavored gelatin
- 1 t. raspberry extract

- 1 c. confectioners' sugar
- 1 egg
- 1 1/2 t. almond extract
- 1 t. vanilla extract
- 2 1/2 c. flour
- 3/4 t. salt
- 1 T. matcha green tea powder
Roasted Pork with Apricot Chutney

Mix iall dry rub ngredients together and rub over all sides of the roast
- 2-2 1/2 lb pork loin roast
- 8 dried apricots, chopped
- Rub
- 1 1/4 T. pumpkin pie spice
- 1/2 T. onion powder
- 1/2 T. garlic powder
- 1 T. fresh rosemary, rough chopped
- 4 cardamom pods (crushed) or 1/2 t. ground caradamom
- 2 t. lemon grass, rough chopped
- 2 t. salt
- 2 t. pepper
- Juice and zest of an orange
- 8 dried apricots, chopped
- Apricot Chutney
- 6 fresh apricots, chopped
- 1 cup coconut milk
- 1/4 t. ground cardamom
- 1 t. cinnamon
- 1/2 T. fresh ginger
- 1 T. lemon juice
- 1/4 cup chicken stock
- zest of an orange
- 1/2 t. salt
- 1 T. cornstarch mixed in 3 T. cold water (if needed to thicken)
Southwest Wedge Salad

- 4 hearts of romaine lettuce
- 6 oz chorizo, cooked and crumbled
- 2 roma tomatoes, diced
- 1/2 cup crumbled queso fresco (optional)
- Avacado Dressing
- 2 avacados
- 1/8 c. olive oil
- 1/4 c. water
- Juice and zest of two large limes
- 2 t. dried cilantro
- 2 t. garlic powder
- salt and pepper
