  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 1 large red bell pepper seeded and sliced
  • 8 oz sliced water chestnuts
  • 11 oz coconut milk
  • 1/8 cup chopped green onion
  • 2-3 T. fresh chopped cilantro
  • 2-3 t. crushed red pepper (to taste)
  • 2-3 T. fresh chopped basil (or 2 t. dry)
  • Pinch of pepper
  • Juice of one lime

  • 1 t. cinnamon
  • 1/2 T. fresh ginger
  • 1 T. lemon juice
  • 1/4 cup chicken stock
  • zest of an orange
  • 1/2 t. salt
  • 1 T. cornstarch mixed in 3 T. cold water (if needed to thicken)
