Strawberry Shortcake

Heat oven 450 degrees. In a large mixing bowl, combine flour, baking powder, salt and sugar
- Shortcake:
- 4 cups flour
- 8 t. baking powder
- 1 1/2 t. salt
- 4 T. sugar
- 4 T. butter
- 1 1/2 cup milk
- 1/2 cup sour cream
- Berries:
- 4 quarts strawberries sliced
- 2 T. sugar
- Juice of a lemon
- 1 pint of whip cream, sweetened
Ginger Cranberry Sauce

Rinse the cranberries. Bring all other ingredients (except starch mixture) to a boil
- 12 oz whole fresh cranberries (if using frozen reduce the water by about 1/4 cup)
- 3/4 cup water
- Juice and zest from large lemon
- 1 T. fresh grated ginger
- 1/4 t. fresh grated nutmeg
- 2-3 T. agave nectar (or honey)
- 1 t. cinnamon
- 1 t. vanilla
- 2 t. kuzu root starch (or cornstarch) dissolved in a little water
Buffalo Beef

Place all ingredients (except cornstarch) into crockpot and cook on low heat for 4-6 hours
- 4 lbs beef stew meat
- 1/2 cup Frank's Red Hot Original
- 2 shallots, sliced
- 2 pinches of salt
- dash of pepper
- 2-3 T. cornstarch (or kuzu root) mixed in a little cold water
Bacon Wrapped Mexitalian Chicken

Wrap chicken breasts with bacon
- 2 large boneless, skinless chicken breasts
- 6 strips bacon
- 2 T. olive oil
- 3 cloves garlic, minced
- 1/2 yellow onion, diced
- 3 cups fresh spinach
- 15 oz can diced tomatoes
- 6 roasted, peeled and diced green chiles (or small can)
- 2 t. Oregano
- 1 T. cumin
- 2 t. green chile powder
- salt and pepper
- 1 avocado, sliced
Almond Butter Bananas

- 1 banana sliced
- 1-2 T. almond butter
- 10 dark chocolate chips
Sausage Scramble

In a medium skillet, melt butter over medium heat
- 4 sausage patties, cooked and cut up
- 1 T. butter
- 5 eggs, beaten
- 2 green onions, sliced
Orange Dreamsicle Cheesecake

For crust: Mix cookie crumbs and melted butter
- Crust
- 1 cup of crushed orange flavored cookies (I actually found orange cream ones) - if you can't find these, use shortbread and add a little orange flavoring
- 3 T. butter melted
- Cheesecake
- 24 oz cream cheese
- 1 cup sour cream
- 1 cucp sugar
- 4 eggs
- 2 t. vanilla
- 1/8 t. salt
- 1/8 cup meringue powder
- 1/4 cup orange flavored gelatin
- 1 T. orange liqueur (or 1 t. orange extract)
Crockpot Pork Carnitas

Put all ingredients in a crockpot and cook on low for 6-8 hours
- 3-4 lbs pork loin or roast
- 1/2 red onion, diced
- 5 or 6 roasted, peeled and diced green chiles (or one small can)
- 1 seeded and diced jalopeno, optional
- 4 cloves garlic, minced
- Juice of two limes and zest of one
- 2 T. ground cumin
- 2 T. fresh chopped cilantro
- 2 t. Mexican oregano
- 1 t. cinnamon
- 2 t. sea salt
- 1 t. pepper
Lettuce Wraps

Paleo friendly
- 2 small chicken breasts cut into very small cubes
- 1 T. olive oil
- 2-3 cloves of garlic minced
- 1 T. Chinese five spice
- 3 T. soy sauce
- 1 t. ground pepper
- 1 - 2 t. red chili flake
- 1 T. fresh ginger (or 1 t. ground ginger)
- 1 cup of chopped eggplant
- 2 small chopped gala apples (peel on)
- 4 chopped green onions
- 1/2 head of butter lettuce (or iceberg)
Blackberry Strawberry Smoothie
