Triple Berry Cream Shortcakes

  • 4 cups flour
  • 8 t. baking powder
  • 1 1/2 t. salt
  • 4 T. sugar
  • 4 T. butter
  • 1 1/2 cup milk
  • 1/2 cup sour cream
  • Berry Sauce
  • 1 pint fresh raspberries
  • 1 pint fresh blueberries
  • 1 quart fresh strawberries, sliced
  • 1/4 cup sugar
  • 1/4 cup water
  • 2 T. orange liqueur
  • 2 T. cornstarch
  • Cream
  • 16 oz cream cheese
  • 1 cup powdered sugar
  • 1 t. raspberry extract
  • 2 t. almond extract
  • 1 t. vanilla

Preparation

Step 1

In a large mixing bowl, combine flour, baking powder, salt and sugar. Cut in butter. Wisk milk and sour cream together. Then mix it in with the dry mixture. Drop the batter by tablespoons onto an ungreased cookie sheet. Bake at 425ºF for 10 minutes or until just brown. Cool.

For berry sauce, place all ingredients in a small pot and cook over medium heat. Stir to keep from burning and cook until it comes to a boil and thickens. Remove from heat and allow to cool.

For cream, place cream cheese in a medium bowl and mix until smooth. Add powdered sugar and cream together. Mix in flavorings.

To serve, top each shortcake with first cream and then the berry sauce. Finish with whipped cream if desired.
