Grown-up Grilled Cheese

Butter one side of the bread and place it butter side down in a pan that has been heated to medium high heat
- 2 slices of sour dough or other bakery bread
- 1 egg, cooked over medium (or to preferred temp) and seasoned with sea salt and pepper
- 3 slices of roma tomato
- 2 slices of "grown-up" cheese (havarati, swiss, provolone, pepper jack, etc.)
- butter for the bread
- 1/4 cup arugula or mixed greens
Steak with Kale and Pepper Saute

Paleo friendly Kale is high in antioxidants and Vitamin A and a great source of fiber
- 4 grilled steaks (whichever cut you prefer)
- 1 yellow pepper, sliced
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 yellow onion cut in half and then sliced
- 3/4 cup plum tomatoes
- 2 T. olive oil
- 3 cloves of garlic, minced
- salt and pepper
Beef Stir Fry

In a large pan, cook green onion, ginger, and garlic in the olive oil for about 1 minute
- 1 T. olive oil
- 1 bunch of green onion, chopped
- 1 T. fresh ginger
- 2-3 cloves of garlic, minced
- 1 pound ground sirloin or lean ground beef
- 1 12 oz package broccoli slaw
- 1 cup chopped kale
- 1 t. red pepper flakes (optional)
- Salt and pepper to taste
- 2 T. Chinese Five Spice
- 2-3 T. low sodium soy sauce (optional)
Triple A Salad (Arugula, Avocado, & Almonds)

Toss all ingredients and serve
- 4 cups arugula (I mixed two types)
- 1 avocado, diced
- 1/4 cup Marcona almonds
- 1/4 cup feta cheese
- 3 T. olive oil
- 2 T. white grape balsamic vinegar
- pinch of pepper
Chinese Chicken Soup

This is full of vitamins and Paleo friendly
- 2-3 cups shredded cooked chicken (I used a roasted chicken from the deli)
- 32 oz low sodium chicken broth
- 1 cup chopped kale
- 1/2 cup shredded purple cabbage
- 1 T. fresh ginger, minced
- 2 cloves of roasted garlic, minced
- 4 green onions, chopped
- 2 t. Chinese five spice
- Pinch of salt and pepper
Huevos en Tostadas (Eggs in Toast)

Beat 2 of the eggs and seasoning together
- 4 slices bread (if bread is real fresh let it sit out on the counter to dry out a bit)
- 6 eggs (or 1 1/2 cups egg beaters)
- 1 t. garlic powder
- 1 t. salt
- 1 t. pepper
- 1 t. smoked paprika
- 1-2 t. Tabasco
- Tomato and avocado to garnish
Pear Vinaigrette

Pulse all ingredients in a blender or food processor
- 2 pears peeled and cubed
- 1/4 cup olive oil
- 2 T. champagne vinegar
- juice of a lemon
- 1 t. cinnamon
- pinch of salt and pepper
Almond & Coconut Treat

- 1 T. unsweetened coconut butter (or unsweetened coconut flakes)

Tomatoes and Greens

- 1/2 bunch of kale, removed from stalk
- 3 roma tomatoes, chopped
- 2 cups spinach
- salt and pepper
- 1 T. Veggie Bombay seasoning
- juice of 1/2 of a lemon
Apple Blueberry Crunch (Paleo Friendly)

This is a no crust, no sugar pie
- 5 medium Gala apples, peeled, cored and sliced
- 1 c. fresh (or frozen) blueberries
- 1 T. lemon juice
- Juice and zest of one orange
- 1 T. pumpkin pie spice
- 1/2 c. chopped pecans
- 1/3 c. 100% orange juice
