Butternut Chicken Stew

Place all ingredients in a crock pot and cook on low for 4-5 hours
- 2 lbs chicken, diced
- 1 bunch asparagus, chopped
- 2 cloves garlic, minced
- 1 head of kale, removed from stems and chopped
- 2 cups cubed butternut squash
- 1/2 yellow onion, chopped
- 7.5 oz can diced tomatoes
- 1 T. autumn spice (find it a your local spice shop)
- 1 t. All Spice
- 1 bay leaf (remember to remove before eating)
- 2 t. oregano
- 2 pinches sea salt
- 1 pinch pepper
- 1 T. kuzu root (or other thickening agent) dissolved 2 T. cold water
Raspberry Vanilla Bean Cheesecake

A healthier alternative than the typical cheesecake but still tastes just as good
- Crust:
- 1/2 cup chopped pecans
- 1/2 cup shredded, unsweetened coconut
- 2 T. coconut oil
- Cheesecake:
- 16 oz cream cheese - full fat, low fat, or fat free or any combo
- 1/2 cup low fat sour cream
- 1/2 cup organic cane sugar
- 3 eggs
- 2 T. ground Tahitian vanilla beans
- 1 t. vanilla
- 1 t. almond extract
- pinch of salt
- Juice and zest of one lemon
- 1 cup fresh (or frozen, thawed) raspberries
- Topping:
- 1/2 cup fresh raspberries
Greek Chicken Salad

Mix all veggies and cheese
- 2 grilled chicken breasts, (seasoned with sea salt, pepper, paprika, and garlic powder), sliced
- 4 cups mixed greens
- 2 roasted red chilis, chopped
- 1 cucumber, peeled and sliced
- 3 green onions, chopped
- 1/4 cup feta cheese (optional)
- Greek Dressing (about 4 servings)
- 3 tablespoons and 1/2 teaspoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon Dijon-style mustard
- 1/4 cup and 1 teaspoon red wine vinegar
Greek Lemon Garlic Chicken

Place all ingredients in crockpot and cook for 4-5 hours on low
- 2 lbs chicken (thighs or breast or combo)
- 4-5 lemons (Zest of 2 juice of all)
- 6-8 cloves garlic, minced
- 8-10 basil leaves, chopped
- sea salt and pepper
- 1-2 T. thickener (kuzu root, cornstarch, etc.)
Braised Pork Ribs

Saute onions and garlic in olive oil for about 2 minutes on medium high heat
- 2-3 lbs boneless pork ribs
- 2 T. olive oil
- 2 cloves minced garlic
- 1/2 red onion sliced
- salt and pepper to taste
- 2 T. Autumn spice (or All Spice)
- 2 cups fresh spinach
Squash Casserole

Mix yams, squash, asparagas, and onions and place in a large glass baking dish
- 3 yams, peeled and sliced
- 1 small butternut squash, peeled and sliced
- 1 bunch of fresh asparagas, chopped
- 1 medium yellow onion, sliced
- 26 oz coconut milk (or regular milk)
- 2 T. Kuzu root (or cornstarch)
- 2 t. garlic powder
- 2 t. pumpkin pie spice
- 2 t. pepper
- 1 t. salt
- 4 sprigs of fresh rosemary, removed from stems and chopped
- Fresh parsley, chopped
Citris Basil Marinade or Vinaigrette

Great for chicken or fish! Also great on salads
- 1/4 cup olive oil
- 1/4 cup orange champagne vinegar (could substitute regular champagne vinegar with 2 T. orange juice)
- Juice and zest of one lemon
- 3 T. fresh chopped basil
- 2 cloves minced garlic
- 1 T. fresh ginger
- salt and pepper
Crockpot Artichokes

Place artichoke halves, center facing up, in a crockpot
- 4 articokes, split and chokes removed
- 1/2 stick butter
- 1 T. garlic powder
- Juice of 2 lemons
- Lemon Dill Aioli
- 1/2 cup organic mayonnaise
- Juice of a lemon
- 1 t. garlic powder
- 2 t. dill
- Sea salt and pepper
Candied Nuts

Mmmm, these candied nuts are perfectly sweetened with a slight hint of vanilla
- 2 cups whole nuts
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons cinnamon
- 2 tablespoons butter
- 1 teaspoon vanilla
10 Spice Chicken

Place chicken in a roaster
- 1 whole chicken, cut up
- 1/2 white onion, chopped
- 6 gloves garlic (leave whole)
- 1 T. adobo spice
- 1 T. cumin
- 2 t. cinnamon
- 1 T. rosemary
- 1 T. poultry seasoning
- 1 T. paprika
- 1 T. Mexican oregano (can use regular as well)
- 1 T. dried cilantro
- 2 pinches sea salt
- 2 pinches pepper
- Juice of a lime
