Mocha Chocolate Chip Cookies

Beat butter and sugars until creaamy
- 2 1/4 cup unsifted flour
- 1 t. baking soda
- 1/2 t. salt
- 1 cup unsalted butter
- 3/4 cup sugar
- 3/4 cup dark brown sugar
- 2 eggs
- 1 T. espresso powder or instant coffee
- 1 T. vanilla paste
- 1 T. vanilla
- 2 t. almond extract
- 1 cup dark chocolate chips
Cheeseburger Bake

Mix meat, Worcestershire sauce, garlic, green chile, and spices
- 2 lbs lean ground beef or bison
- 3 cloves garlic, minced
- 1 red or green bell pepper, seeded and chopped
- 4 green onions, chopped
- 1/2 c. cherry or cherub tomatoes
- 2 c. fresh spinach
- 4 roasted green chiles, peeled, seeded and chopped
- 3 T. Worcestershire sauce
- 2 eggs beaten
- Few pinches pepper
- Few pinches sea salt
- 2 T. green chile powder
- 1/2 c. Munster, aged cheddar, fresh mozzarella or other cheese
Cobb Salad

Mix olive oil, vinegar, salt and pepper
- 2 cups mixed greens
- 1 hard boiled egg, sliced
- 2-3 oz. grilled chicken breast, chopped (optional)
- 2 pieces crisp bacon, chopped
- 8 yellow cherry tomatoes, sliced in half
- 8 red cherry tomatoes, sliced in half
- 1/2 avocado, chopped
- 1 T. extra virgin olive oil
- 1/2 T. balsamic vinegar
- salt and pepper
Poached Eggs and Greens

In a small pan heat olive oil and saute garlic and shallots for about 1 minute
- 4 poached eggs
- 2 T. olive oil
- 2 shallots sliced
- 1 clove of garlic, minced
- 1 small zucchini, sliced
- 1 cup chopped kale
- 1/4 cup arugula
- 1 T. Bombay Veggie
- salt and pepper

- 8-10 apples, peeled, cored and sliced
- 1/2 cup coconut sugar
- 1/2 cup almond flour
- 1/2 cup pecans, chopped
- 1/4 cup butter softened
- 2 teaspoons pumpkin pie spice
Green Chile Cheeseburger

Mix all burger ingredients
- Burgers
- 1-1 1/2 lbs ground beef or bison
- 2 t. garlic powder
- 2 t. onion powder
- 2 t. cumin
- 1 T. fajita seasoning
- pinch of sea salt
- pinch of pepper
- Topping
- 1 cup shredded cheddar cheese
- 5 whole green chiles, chopped (or 1/2 of a small can, drained)
- 3 t. green chile powder
Holiday Dip

Red and green roasted chilis make this dip delicious and festive
- 1 jar fire roasted red peppers, chopped
- 5 roasted, peeled and chopped green chilis (or a small can)
- 8 oz fat free cream cheese
- 8 oz fat free greek yogurt (or sour cream)
- garlic salt to taste
- 2 T. chopped cilantro
- 2 T. green chili powder
Shrimp Stew

Place broth and lemongrass in a large pot and bring to a full boil
- 1.5 - 2 lbs raw shrimp, peeled and de-veined
- 5.5 oz can coconut milk
- 32 oz organic chicken broth (low sodium)
- 14.5 oz can organic stewed, diced tomatoes
- 6 oz can organic tomato paste
- 1/2 red onion, diced
- 4 cloves garlic, diced
- Sea salt and pepper to taste
- 1/2 - 1 t. cayenne pepper, optional
- 1/4 - 1/2 t. red chili pepper flakes, optional
- 1 bay leaf (remember to remove before serving)
- 2 t. oregano
- 1 T. curry powder
- 1 T. lemon grass
- 1 t. ground ginger (or 1 T. fresh)
- 1 large carrot, thinly sliced
- 1 red bell pepper, seeded and chopped
- 1/2 bunch of asparagus, chopped
- 1 zucchini, cut in half then sliced
- 1 bundle of kale, removed from stems and chopped
Sauteed Mushrooms

Heat butter over medium high heat until melted
- 1 pint of button mushrooms, sliced (or your favorite type)
- 2 T. butter
- 2 shallots, minced
- 1 T. minced garlic
- 2 T. red wine
- salt and pepper
Salsa Pepper Pork Chops

Saute onions and garlic in olive oil for about 1 minute
- 4 pork chops, steaks, or fish
- (Grill and season meat with salt, pepper, and green chili powder)
- 2 T. chili infused olive oil
- 1/2 red onion, sliced
- 3 cloves minced garlic
- 1 large green bell pepper sliced
- 1 large yellow bell pepper sliced
- 1 large red bell pepper sliced
- 2 small zucchinis sliced
- Juice of a lemon
- 1 cup salsa (see my salsa recipe)
