Pie Crust

This makes two pie shells
- 2 cups flour
- 1/2 cup unsalted butter, cubed
- 3-5 T. ice cold water
Sweet Serrano Vinaigrette

Chop serranos in big chunks and then chop in a food processor or blender
- 3-4 serrano peppers seeded and de-veined
- 2 T. apple cidar vinegar
- Juice and zest of one lime
- 2 T. simple syrup (or 2 T. sugar mixed with a few tablespoons of water until it dissolves)
- 2 T. fresh chopped cilantro or 2 t. dried
- 1/2 cup olive oil
- Salt and pepper to taste
Candy Cane Cheesecake Bars

Make it lower fat and calories by using my low fat or fat free substitute suggestions
- Crust
- 1 package of Oreos (regular or candy cane), crumbled OR 3 cups chocolate graham crumbs mixed with 2 egg whites
- Cheesecake
- 16 oz fat free cream cheese
- ¾ c. sugar
- 1 c fat free sour cream
- 3 large eggs OR 3/4 cup egg beaters
- 2 t. vanilla extract
- 2 t. almond extract
- 2 t. peppermint extract
- 2 t. lime juice
- pinch of salt
- ½ c. crushed candy canes
Asparagas & Sweet Potatoes Au Gratin

Preheat oven to 425 F. In a large lasagna pan, layer sliced potatoes, asparagas, and shallots
- 3 sweet potatoes, peeled and thinly sliced
- 3 shallots, sliced
- 1 bunch of asparagas, chopped
- 14 oz can coconut milk (mix in 1 T. kuzu root for thickening)
- 4 T. butter
- 2 t. garlic salt
- 1/4 cup parmesan or asiago cheese
- 1/4 cup cheddar cheese
- sea salt
- pepper
Ahi Tuna with Balsamic Ginger Slaw

Mix the slaw, avocado, onions, and almonds in a medium size bowl
- 2 ahi tuna steaks
- 2 T. butter or coconut oil
- 12 oz pkg broccoli slaw or coleslaw
- 2 avocados, chopped
- 3 green onions, chopped
- 1/4 cup marcona almonds
- 2 T. olive oil
- 1/4 cup balsamic vinegar
- 1 T. fresh grated ginger
- Pinch of sea salt and pepper
Overstuffed Southwest Bell Peppers

Heat olive oil over medium high heat
- 6 green bell peppers, hollowed and roasted
- 1 lb lean ground pork or beef
- 6 oz soft chorizo
- 1/2 of large yellow onion, diced
- 3 cloves garlic, minced
- 2 T. olive oil
- 1 14 oz can stewed, diced tomatoes
- 6 roasted, peeled, and chopped green chilis (or one can)
- 2 cups raw cauliflower rice or cooked (al dente) white rice
- 1/2 cup chicken broth
- 1 T. cumin
- 2 T. fresh chopped oregano or 1 T. dried oregano
- 2 T. fresh chopped cilantro or 1 T. dried cilantro
- 1 T. green chili powder
- salt and pepper to taste
- 1 cup shredded cheese (optional)
Autumn Pork Roast

Berry Mix In a large pot heat frozen berries, water, and sugar and bring to a boil
