Chilled Squash Salad

Ingredients
- 1 medium squash (zucchini, summer, or other), chopped
- 1/2 red onion, halved and sliced
- 1 cup cherry tomatoes
- 1 T. fresh cilantro, chopped
- 2 t. veggie bombay seasoning
- pinch of salt and pepper
- 1/8 cup crumbled feta cheese (optional)

Preparation
Step 1
Steam the squash and onions until softened. Place in a bowl and let cool. Add tomatoes, seasonings and cheese (if desired) and mix. Chill and serve.
