Ingredients

  • Green Goddess Dressing Ingredients

  • 1

    avocado

  • 2

    T. chili oil

  • ¼

    cup olive oil

  • 2

    T. dried cilantro

  • 2

    t. cumin

  • 1

    t. garlic powder

  • Juice of one lime

  • ¼ - ½

    t. cayene pepper (to desired heat)

  • Pinch of sea salt

  • 3-4

    T. water (to thin as desired)

  • Salad

  • 2

    cups spinach

  • 2

    cups mixed greens (I found a spicy mix)

  • 2

    green onions, diced

  • ¼

    cup roasted pistachios

  • ¼

    cup shredded Havarati cheese, optional (I found Havarati Dill at Whole Foods)

  • ½

    cup green grapes, sliced in half

  • 2

    kiwi fruits, peeled and sliced

Directions

Blend the Green Goddess dressing ingredients together. Toss all salad ingredients with dressing, reserving the cheese, grapes, and kiwi fruit. Place salad on two plates and top with cheese, grapes and kiwi.
