Baked Chicken Parmesan

Heat oven to 375 F. Place chicken breasts in a small oven safe dish
- 2 boneless, skinless chicken breasts
- 1 small can diced tomatoes
- 1/2 yellow onion, sliced
- 4 cloves of garlic, minced
- 2 t. dried oregano
- 2 t. dried basil
- sea salt and pepper
- 1/2 t. thyme
- 1/2 cup parmesan cheese
Berry Smoothie

Blend all ingredients and enjoy
- 5-6 strawberries
- 1/4 cup blueberries
- 1/4 cup egg white protein (or 1 serving of protein powder)
- 1/4 cup coconut milk
- 5-7 ice cubes
Asian Ahi Tuna with Kale and Red Peppers

Mix all marinade ingredients
- 2 Ahi Tuna Steaks
- Marinade
- 1/4 cup olive oil
- 1/4 cup red cooking wine
- 1/4 cup water
- 3 T. low sodium soy sauce
- Juice of a lime
- 3 cloves garlic, minced
- 1 t. pepper
- 3 T. fresh grated ginger
- Kale and Red Peppers
- 2 T. olive oil
- 2 red bellpeppers, seeded and sliced
- 1 head of kale, stems removed and chopped
- 1 large shallot, minced
- 2 cloves garlic, minced
- 2 t. Chinese Five Spice
- salt and pepper

- 1/4 cup olive oil
- 1/4 cup water
- 3 T. Renee's Desert Rub (www.azemporium.com)
- 2 T. chives
- 1 t. pepper
Green Smoothie

Don't knock it til you try it
- 1 1/2 cups water
- 1 stalk romaine lettuce, chopped
- 1 cup fresh spinach
- 1 cucumber chopped
- 1 apple, cored and chopped
- 1 pear, cored and chopped
- 1 banana
- Juice of a lemon
- Handful fresh cilantro, optional
- Handful fresh parsley, optional
Ginger Cranberry Vinaigrette

Pulse all ingredients in a blender or food processor
- 1/2 cup ginger cranberry sauce (see my recipe)
- 1/4 cup olive oil
- 2 T. champagne vinegar (I prefer the Orange Muscat Champagne vinegar)
- pinch of salt and pepper
Double Berry Apple Pie

In a large bowl mix apples with lemon juice and zest
- 2 pie crusts (regular or with almond or coconut flour)
- 6 gala apples, peeled and sliced
- juice and zest of one lemon
- 1 T. pumpkin pie spice
- 1/4 cup orange juice
- 2 T. agave nectar (or honey)
- 3 T. flour (or coconut flour for Paleo)
- 1 cup fresh raspberries (or frozen if drained well)
- 1 cup fresh blueberries (or frozen if drained well)
Eric's Pumpkin Protein Pancakes

- 5 oz pumpkin puree
- 1 scoop 100% whey protein
- 3 eggs
- 1/4 cup chopped pecans or walnuts
- 1/2 t. baking soda
- 1 T. pumpkin pie spice
- 1 T. almond or coconut flour (optional if want to make batter thicker)
Brownie Cupcakes

Melt butter and dark chocolate (60% or higher)
- 3/4 ¾ c. unsalted butter
- 8 oz dark chocolate (60% or higher)
- 1/2 ½ c. sugar
- 2 eggs
- 1/2 ½ t. salt
- 1 t. vanilla
- 1/4 ¼ cup chocolate syrup
- 1/2 ½ cup flour
- Frosting
- 7 oz marshmallow cream
- 1 c. Nutella

- 1/2 yellow or red onion
- 2 cloves of garlic, minced
- 1 T. cumin
