Apple Berry Pie

  • 2 Pie Crusts (see my recipe)
  • Berry Mix
  • 1/2 cup frozen raspberries
  • 1/2 cup frozen blueberries
  • 1/4 cup water
  • 1/2 cup sugar
  • Juice and zest of half a lemon
  • 1 T. cornstarch mixed with cold water for thickening
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • Apple Mix
  • 6 Fugi or Gala apples peel, seeded and sliced
  • 1/4 cup brown sugar
  • Juice and zest of half a lemon
  • 1 T. pumpkin pie spice
  • 3 T. flour
  • Egg Wash
  • 1 Egg
  • 2 T. milk

Step 1

Berry Mix
In a large pot heat frozen berries, water, and sugar and bring to a boil. Add lemon juice and rind and stir. Add fresh berries being careful when stirring to not break up the berries. Add thickening mix and stir. After it starts to thicken remove from heat and cool.

Apple Mix
Mix all ingredients together.

Place one pie crust in a deep dish 9" pan. Place one layer of apples on bottom. Top with berry mixture. Then add another layer of apples. Put the top crust on and crimp the ends to seal.

Brush with egg wash mixture.

Bake at 375 F for 1 hour or until the apples are tender.

Let cool completely for several hours before serving to allow the pie to thicken.
