White Fish Piccata

Melt butter on medium high heat
- 2 white fish fillets (halibut, tilapia, barramundi, etc.)
- 2 T. butter
- Pinch of salt and pepper
- 3 green onions, chopped
- 2 cloves of garlic, minced
- Juice of 2 large lemons, zest of one
- 1 T. capers
- sliced lemon for garnish
Turkey and Mixed Greens with Blueberries and Sweet Yellow Tomatoes

Whisk lemon juice, olive oil and salt and pepper
- 2 cups mixed greens
- 1 cup fresh spinach
- juice of one lemon
- 3 T. olive oil
- pinch of sea salt and pepper
- 3 cups broasted, shredded turkey breast
- 1/2 cup sliced sweet baby yellow tomatoes
- 1/3 cup blueberries
- 1/4 cup slivered almonds
Paleo Strawberry Shortcakes

For the cake, mix all ingredients together until smooth
- Cakes
- 4 eggs plus 2 whites
- 1/2 cup organic cane sugar
- 1 cup coconut milk (reserve the thickened portions on the sides and lid of the can for the Paleo whip cream)
- 2 t. vanilla
- 1/2 t. baking soda
- 1/2 cup plus 2 T. coconut flour
- Strawberry Sauce
- 1 cup strawberries, chopped
- 1 T. agave nectar
- Paleo Whip Cream
- Thick cream scrapped from lids and side of can of coconut milk (this should be very cold)
- 1 T. organic cane sugar
- 1 t. vanilla
B.E.T (Bacon, Egg and Tomato) Salad

Toss arugula with lemon juice
- 4 cups arugula (or spinach)
- 4 pieces of bacon cooked and cut into pieces
- 2 roma tomatoes, sliced
- juice of one large lemon
- 2-4 eggs, either poached or fried
- pinch of salt and pepper
- 1 t. Veggie Bombay
Sweet Mango Wings

Mix all ingredients in a re-sealable plastic bag and marinate for several hours or overnight
- 2 lbs chicken wings
- 1 bottle of mango pineapple grilling sauce (I got mine at Target – Archer Farms)
- 1/4 ¼ c. water
- 1/4 ¼ c. chili infused olive oil
Chili Lime Chicken

In a large sauce pan, heat olive oil over medium heat
- 2 boneless, skinless chicken breasts, cubed
- 2 T. olive oil
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 5 roasted green chilis (peeled, seeded, and diced)- or 1 small can
- Juice of 2 large limes and zest of one
- 1 large bell pepper (any color), seeded and cut into strips
- 1 bunch of asparagas, cut into large sections
- 1 t. cinnamon
- 1 T. chopped fresh cilantro
- 1 T. green chili powder
- 2 t. ground cumin
- 2 t. Mexican oregano (or regular)
- salt and pepper

- 1 (12-ounce) package chorizo, cooked, drained
- 1/2 pound ground beef seasoned for tacos
- 2 cups guacamole
- 1 cup salsa, if using store bought, use chunky and drain excess water
- 1/2 cup chopped green chilis
- 3 green onions, chopped
- 2 Roma tomatoes, diced
Roasted Chicken

Heat oven or roaster to 350 F
- 4-5 lb whole chicken, cleaned and dried
- 1/2 stick of butter, softened
- 1 T. rosemary
- 1 T. oregano
- 1 T. thyme
- 4 cloves of garlic, minced
- 1 lemon cut in half
- Pinch or two of sea salt
- Pinch or two of pepper
- 1 T. paprika
Italian Flag Stuffed Chicken

Preheat oven to 375 F. Season chicken with a little salt and pepper and paprika on both sides
- 2 large boneless, skinless chicken breasts, flattened
- 1/2 cup fire roasted red peppers
- 1/4 cup goat cheese
- 1/2 cup fresh spinach
- 2 cloves of garlic, minced
- 1 t. oregano
- 1 t. basil
- salt and pepper
- paprika
Cauliflower Mash

- One head of cauliflower
- salt and pepper to taste
- garlic (optional)
- 2 T. butter (optional)
- Milk or coconut milk (for Paleo) to thin if needed
