Fiesta Zucchini de Camarones

Ingredients

  • 4 large zucchini, cut in half, steamed and seeded
  • 1 T. olive oil
  • 1 red bell pepper, seeded and chopped
  • 2 roasted green chilis, peeled, and chopped
  • 1/2 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 T. fresh cilantro, chopped
  • 35-40 medium shrimp, shelled and deveined
  • pinch of sea salt
  • pinch of pepper
  • 2 t. Veggie Bombay (or other veggie seasoning mix)
  • Juice of half a lime
  • 4 T. shredded parmesan (optional)

Preparation

Step 1

In a large skillet on medium heat, cook onion, bell pepper, and green chili until they start to soften (about 5 minutes). Add garlic and stir. Add shrimp, salt, pepper, and Veggie Bombay and cook until the shrimp are cooked (about 2 -3 minutes). Add cilantro and lime and stir.

Place the zucchini on a cookie sheet (I lined mine with foil) and fill each with the shrimp mixture. Top with parmesan cheese. Place in the oven under the broiler (on low) just until the cheese melts and starts to brown (1-2 minutes).
