Shrimp and Orzo Salad

In a large bowl, whisk together olive oil, vinegar and Knorr Basil Parmesan Pasta seasoning
- 3 tbsp. olive oil
- 2 tbsp. wine vinegar
- 1 pkg. Knorr Basil Parmesan Pasta Seasoning
- 1 lb. shrimp cooked and chilled
- 1 1/2 cups orzo, cooked al dente, drained and patted dry with paper towels
- 1 tbsp. lemon juice
- 1 small red onion, thinly sliced
- 1 small red pepper, seeded and thinly sliced
- 1 cup crumbled feta cheese
- 1 1/2 cups cherry tomatoes
Hearty Chicken Tortilla Soup

Prep time: 10 minutes Cook time: 30 minutes
- 2 boneless, skinless chicken breasts, cut into chunks
- 1 box (900ml.) ready to use chicken broth
- 1 tsp. ground cumin
- 1/3 cup uncooked regular long grain white rice
- 1 1/2 cups frozen corn niblets
- 1/4 cup chopped red or green pepper
- 1/2 cup chunky salsa
- 1 tbsp. chopped fresh cilantro leaves
- 2 tbsp. fresh lime juice
- crisp tortilla chips
Parmesan Roasted Asparagus

Preheat oven to 425F. Lightly grease a baking sheet with non stick spray and set aside
- 1 1/2 lbs. fresh asparagus, trimmed
- 2 tbsp. olive oil
- 1/2 cup breadcrumbs
- 3/4 cup shredded parmesan cheese
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
Nacho Pinwheels

Heat oven to 350F. Spray cookie sheet with cooking spray
- 1 can (8oz.) pillsbury refigerated crescent dinner rolls
- 1 package (3oz.) cream cheese, softened
- 1 1/2 tsp. taco seasoning mix
- 1/3 cup finely shredded cheddar cheese
- 1/4 cup green giant mexicorn, whole kernel corn with red and green pepers (from 11 oz. can) drained
- 2 tbsp. finel chopped green onions (2 medium)
- salsa, if desired

- 1/4 tsp. crushed red pepper flakes
- 1 clove garlic, finely chopped
- 1 can (14oz.) artichoke hearts, drained, chopped
- 1 can (6oz.) crabmeat, well drained
- 1 jar (2oz.) diced pimento, drained
- 1 tbsp. chopped fresh parsley
