- Dijon vinaigrette
- 1/4 cup rice wine vinegar
- 2 tbsp. Dijon mustard
- 1 large clove garlic, minced
- big pinch of salt
- black pepper to taste
- 2/3 cup olive oil
- Pasta Salad
- 2 medium zucchini, thinly sliced lengthwise
- 1 medium yellow pepper, halved lengthwise, seeded
- 2 tbsp. olive oil
- ground pepper and salt to taste
- 2 tbsp. salt for pasta water
- 1 lb. medium pasta shells
- 1 lb. cooked shrimp, halved lengthwise
- 8 oz. cherry tomatoes, halved
- 3/4 cup coarsely chopped, pitted Kalamata olives
- 1 cup crumbled feta cheese
- 1/2 small red onion, cut into small dice
- 2 tsp. dried oregano
Berry Cheesy Spinach Salad

- Dressing:
- 1 bag (10 oz./300g.) of spinach, washed and dried, removing thick stems
- 8 oz. (225g) Havarti, cut in matchsticks
- 1 pint of fresh strawberries, sliced
- 1 c. (250ml.) precooked baby shrimp
- 1 large endive, sliced (optional)
- 1 small red onion, finely sliced
- roasted pine nuts for garnish (optional)
- 6 tbsp. (90ml.) olive oil
- 2 tbsp. (30ml.) white wine vinegar
- 2 tsp. (10ml.) honey
- 1 1/2 tsp. (7ml.) dijon mustard
- salt and pepper to taste

- 1 lb. cooked ground beef
- 2 cups mozzarella cheese
- 1 can cream of mushroom soup
- 1/2 cup water
- 1/2 cup parmesan cheese
Awesome Ham Pasta Salad

- 8 oz. penne pasta
- 1 lb. cooked ham, cubed
- 1 large red pepper, cut into 1" pieces
- 1 large green pepper, cut into 1" pieces
- 1 large red onion, coarsely chopped
- 15 small sweet pickles, chopped, juice reserved
- 1 c. cherry tomatoes, halved
- 1 c. mayonnaise
- 1/2 c. sour cream
- 2 1/2 tsp. beef bouillon granules
- 1 tbsp. white vinegar
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 2 gloves garlic, minced
Bacon Wrapped Pork Tenderloin with Harvest Vegetables
