Shrimp and Orzo Salad

  • 3 tbsp. olive oil
  • 2 tbsp. wine vinegar
  • 1 pkg. Knorr Basil Parmesan Pasta Seasoning
  • 1 lb. shrimp cooked and chilled
  • 1 1/2 cups orzo, cooked al dente, drained and patted dry with paper towels
  • 1 tbsp. lemon juice
  • 1 small red onion, thinly sliced
  • 1 small red pepper, seeded and thinly sliced
  • 1 cup crumbled feta cheese
  • 1 1/2 cups cherry tomatoes

Step 1

In a large bowl, whisk together olive oil, vinegar and Knorr Basil Parmesan Pasta seasoning. Stir in shrimp. orzo. juice, onion, red pepper, feta, and tomatoes. Season with salt and pepper to taste.
