Preheat the oven to 400°F
- 1 tablespoon extra-virgin olive oil
- 1 shallot, halved and sliced
- 1/2 small yellow onion, diced
- 3 cloves garlic, chopped
- 1 small bunch (about 10 leaves) Swiss chard, tough stems removed, leaves sliced
- 1/2 cup white wine
- 1 (28-oz) can whole tomatoes
- 1 (15-oz) can cannellini beans, rinsed and drained
- 2 bay leaves
- 1/8 teaspoon crushed red chile flakes
- 1 teaspoon kosher salt, divided
- 4 (6-oz) pieces skinless cod fillet
- 1/2 teaspoon ground black pepper

- 2 medium red onions, grated
- 4-5 spring onions, finely chopped
- 1/2 bunch of dill, finely chopped
- 1/2 bunch of parsley, finely chopped
- 1 can(s) beer
- 250 g self-rising flour

Mix spice mix. Season Cod with 1 T spice mix and set aside Heat oil, add onion, bell pepper, garlic
- Spice Mix:
- Cod fillets for 4 (1.5 to 2 pounds)
- 1 T Olive Oil
- 1 cup diced onion
- 2 cups red bell pepper diced fine
- 2 cloves garlic chopped
- 2 T Tomato Paste
- 1/4 c liquid (fish stock, clam broth, white wine, water)
- 1 can (28 oz) crushed tomatoes
- Pinch sugar
- S and P
- 2 T kosher salt
- 2 T paprika
- 2 T coriander
- 1 T cumin
- 2 tsp cayenne
- 2 tsp tumeric

- 4 green onions sliced
