Grilled Lobster Rolls w/ Lemon Black Pepper Mayonnaise

Ingredients
- 3/4 cup mayonnaise
- Grated zest of one lemon
- juice of one lemon
- 1 large stalk celery, finely diced
- 1 small red onion, finely diced
- 2 Tbl finely chopped fresh chives
- 1 Tbl finely chopped fresh tarragon leaves
- 1 teas coarsely ground black pepper
- 1 teas kosher salt
- Grilled Lobster Tails (recipe in Grilling cookbook)
- 8 hot dog buns, split 3/4's of the way through
- 8 Tbl (1 stick) unsalted butter, softened

Preparation
Step 1
Stir together the mayonnaise, lemon zest & juice, celery, onion, chives, tarragon, pepper & salt in a large bowl. Add the lobster meat and stir to combine. The lobster salad can be covered and refrigerated up to two hours.
Heat your grill to high.
Brush the inside of the buns with the butter and place, butter side down, on the grill. Grill until lightly golden brown, 30-40 seconds.
Divide the lobster salad among the buns and serve immediately.
