Roasted Pork Tenderloin with Raisin-Ginger Pan Sauce
Ingredients
- 1 1 1/4lb. pork tenderloin
- 2 t olive oil
- Salt & pepper
- 1/2 C apple juice
- 1/2 C chicken broth
- 1 T soy sauce
- 3 T golden raisins
- 1/2 t ground ginger
- 1/4 T cornstarch dissolved in 1 T water

Step 1
Preheat oven to 350
Coat pork with oil; season with salt & pepper. In large nonstick oven proof skillet, cook pork over mod. hi heat til browned all over, 3 min per side.
Transfer skillet to oven & roast for @ 18 min, turning twice, til thermometer reads 140.
Transfer pork to carving board & let rest for 10 min. Add apple juice, broth, soy sauce, raisins & ginger to skillet & bring to boil. Cook til liquid is reduced by half. Stir in cornstarch & cook, stirring, til thick enough to coat spoon, @ 30 sec. Remove from heat.
Carve pork. Stir any carving juices into pan sauce. Then pour sauce over pork & serve.
