Spinach and Bacon Quiche II

This is a wonderful basic quiche recipe. Sometimes I add shrimp and crab meat along with some Old Bay seasoning. If you add these, make sure you use a deep dish 9 inch pie crust. The photo used has shrimp and crab meat added. About 6oz. of each.

Ingredients

  • 6

    large eggs

  • 1 1/2

    cups heavy cream

  • Salt and pepper

  • 2

    cups chopped fresh baby spinach, packed

  • 1/2

    pound bacon cooked and crumbled

  • 1 1/2

    cups mozzarella cheese

  • 1

    refrigerated pie crust

Directions

Preheat oven to 375 degrees F Combine the eggs, cream, salt and pepper in food processor or blender. Layer spinach, bacon and cheese in the bottom of the pie crust, pour egg mixture on top. Bake for 55 to 65 minutes or until the egg mixture is set. After about 45 minutes put a piece of foil over quiche to prevent it from getting too brown.
