Roasted potatoes with oregano and lemon

  • 2 lbs fingerling potatoes
  • 4 sprigs oregano
  • 1 tbsp olive oil
  • salt and pepper
  • 1 tbsp fresh lemon juice


Servings 6


Step 1

Preheat oven to 450. On a rimmed baking sheet, toss potatoes with oregano and olive oil. Season with salt and pepper. Arrange in a single layer and roast until tender, 30 minutes, toss halfway through.
Transfer to a serving bowl and toss with 1 tbsp lemon juice.
