    lbs fingerling potatoes

    sprigs oregano

    tbsp olive oil

  • salt and pepper

    tbsp fresh lemon juice

Directions

Preheat oven to 450. On a rimmed baking sheet, toss potatoes with oregano and olive oil. Season with salt and pepper. Arrange in a single layer and roast until tender, 30 minutes, toss halfway through. Transfer to a serving bowl and toss with 1 tbsp lemon juice.
