  • 2 1/2 pounds red potatoes, cooked and cubed
  • 1/2 pound sliced bacon, cooked and crumbled
  • 1/2 pound cheddar cheese, cubed
  • 2 cups shredded cheddar cheese
  • 1/2 large onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 T minced chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Preparation time 15mins
Cooking time 65mins


Step 1

In a very large bowl, combine potatoes and bacon. In another large bowl, combine the remaining ingredients; add to potato mixture and gently toss to coat.
2. Transfer to a greased 4 baking dish. Bake, uncovered, at 325° for 50-60 minutes or until bubbly and lightly browned.
