Green bean and tomato salad

Ingredients

  • 1 lb. fresh green beans, washed and trimmed
  • sunburst tomatoes, halved
  • grape tomatoes, halved (any small tomato will do; just add as many as you'd like)
  • 1/4 c red onion, thinly sliced

Preparation

Step 1

Steam green beans in 1/2 inch boiling water covered for 3 or 4 minutes. Cold shock beans by running under cold water and drain well. Place beans in a bowl and combine with onions and tomatoes.

Vinaigrette:


3 tbsp fresh lemon juice (I use more)
1 tbsp dijon mustard ( I use more)
1/4 cup olive oil (amount varies depending on amount of veggies)
coarse salt/black pepper, to taste
1 tsp minced garlic

Put all ingredients into a jar and shake vigorously.
