Creamy Lemon Mushroom Shrimp Rice

Ingredients

  • 1 bag Success white rice
  • 1 tbsp garlic flavored olive oil
  • 16 oz sliced mushrooms (about 6 cups)
  • 1 tub (8oz) onion & chive cream cheese
  • 1 lb cooked and peeled shrimp (about 40)
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1/2 cup shredded parmesan cheese

Step 1

Prepare rice according to package. Heat oil in skillet, add mushrooms and cook 6 minutes or until golden. Stir in cream cheese until melted. Add shrimp and water; cook until heated through about 2 minutes. Fold in cooked rice, lemon juice and more water (if needed) to keep mixture creamy. Top with cheese.
