Green Pea and Corn Medley

  • 2 tbsp butter
  • 3 cups frozen green peas
  • 3 cups frozen kernel corn
  • 2 tbsp water
  • 1/2 tsp thyme crumbled
  • 1/2 tsp salt
  • 2 tbsp crumbled cooked bacon
  • 1 tbsp chopped fresh parsley



Step 1

Melt butter in a frypan over medium heat. Stir in peas, corn, water, thyme and salt. Bring to a boil over medium heat. Reduce heat and simmer, covered, stirring occasionally until peas and corn are tender and most of the liquid is absorbed, about 5 minutes. Stir in bacon and parsley. Serves 8-10.
