Ingredients
- Salad:
- 1 jar (14 oz.) artichoke hearts drained
- 16 oz cheese filled tortellini (adjust for preference; I use 8 oz)
- 1 lb medium shrimp
- 1 c sliced Italian black olives
- Dressing:
- 3 T lemon juice
- 3 T white wine
- 1 tsp Dijon mustard
- 3 T fresh or 1 T dried parsley
- 1 tsp salt
- 3 garlic cloves, crushed
- 1 T ground cumin
- 1/2 tsp white pepper
- 1/8 tsp cayenne pepper

Preparation
Step 1
Cook tortellini according to package directions, adding shrimp for the last 3 minutes. Rinse. Cut artichokes into quarters. Add to tortellini and shrimp along with olives. Combine dressing ingredients and add to salad. Chill for one hour.
