White Bean & Roasted Garlic Soup

Ingredients
- 1/2 c peeled garlic cloves
- 1 T olive oil
- 3 cans cannellini rinsed and drained
- 2 1/2 cups cups chicken stock
- 3/4 cup diced plum tomatoes
- 2 sprigs rosemary
- 2 ounces smoked ham finely chopped
- salt and plenty of pepper
- croutons

Preparation
Step 1
1.combine garlic and olive oil in small saucepan. partially cover and cook over medium low heat till garlic is very soft and golden. (20 minutes)- stir often.
2. add garlic and oil with 3 cups of beans to food processor and puree. put some stock in it.
3. return puree to large saucepan. add 2 c cups of stock, rest of the beans, tomatoes, rosemary sprigs and ham.
4. bring mixture to a boil, reduce heat and simmer 30 minutes.- add more stock if needed. remove rosemary sprigs, season with salt and pepper and keep warm over low heat.
5. serve and top with croutons.
