Caramelized Onion Sweet Potato Gratin

Ingredients

  • 2 tablespoons olive oil
  • 5 cups sliced onion, divided
  • 3 tablespoons Domino" dark brown
  • sugar, divided
  • 1/4 teaspoon ground red pepper
  • 1/3 cup butter
  • 3 tablespoons all-purpose flour
  • 2 cups half-and-half
  • 11/2 teaspoons salt
  • Yz teaspoon ground black pepper
  • ¥2 teaspoon smoked paprika
  • 1 1
  • 3 3
  • teaspoon Dijon mustard
  • pounds peeled, very thinly sliced
  • sweet potato
  • 2 cups grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Preparation

Step 1

{1} Preheat oven to 350°. Spray a 13x9-inch
baking dish with nonstick cooking spray.
{2}In a large skillet over medium-high heat,
heat oil. Add half of onions, and cook 5
minutes, stirring frequently. Reduce heat
to medium. Cook 10 to 15 minutes or until
onions are dark golden brown, stirring
frequently. Sprinkle with lYz tablespoons
sugar and red pepper. Remove with a slotted
spoon, and drain well on paper towels.
Repeat procedure with remaining half of
onions, more oil, if needed, and remaining
1Yz tablespoons sugar. Drain well, and
combine onions, tossing well.

{3}In a small saucepan, melt butter over
medium heat. Sprinkle with flour, and stir
well with a whisk. Cook 2 minutes, stirring
constantly. Gradually stir in half-and-half,
stirring with a whisk. Add salt, peppel; paprika,
and mustard. Cook, stirring frequently, until
thickened. Remove from heat.
{4}In prepared baking dish, layer in this
order: half of potatoes, 1 cup cheese, and half
of sauce (about 1 cup sauce). Repeat layers
with remaining potatoes, cheese, and sauce,
and top with reserved onions. Cover with
aluminum foil, and bake 30 minutes or until
potatoes are tender when pierced with a knife.
Remove foil, and bake until bubby and cheese
is melted, about 15 minutes. Let stand 10 before serving. Sprinkle with parsley
