Swiss Chard with Chickpeas and Cous Cous

Ingredients
- 1 10 ounce box couscous
- 1/2 cup pine nuts (optional)
- 3 tablespoons olive oil
- 2 cloves garlic, thinly sliced
- 1 15.5 ounce can chickpeas, rinsed
- 1/2 cup dark raisins
- 2 bunches Swiss chard
- 3/4 teaspoon kosher salt
- 1/2 teaspoon pepper

Step 1
Place couscous in a bowl. Add 1½ cups boiling water and stir. Cover tightly and let
Stand for ten minutes.
Meanwhile, in a large skillet, over low heat toast the pine nuts (if using), shaking often until golden brown, about five minutes. Transfer to a plate.
Return skillet to medium heat, add oil, heat for one minute.
Add garlic and cook for one minute. Add chickpeas, raisins, chard, salt, and pepper.
Cook, stirring occasionally, until chard is tender, about five to eight minutes.
Remove from heat. Fluff couscous with a fork and divide among individual plates.
Top with the chard mixture and sprinkle pie nuts if using.
Beth really like this and fairly easy to make.
