Grilled Shrimp with Avocado & Orange Salad

Ingredients

  • 2 navel oranges
  • 2 t. hot sauce
  • 1/4 C + 1 T olive oil
  • 2 T chopped mint
  • Salt & pepper
  • 24 large shrimp
  • 3 T lime juice
  • 1 C cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/4 C chopped cilantro
  • Pinch oregano
  • 2 avocados, cut into wedges

Step 1

Using sharp knife, peel orangees, removing the pith. working over strainer set over med. bowl, cut between membranes to release juice. Whisk 1 t hot sauce into strained juice with 1 T oil & mint.
In another bowl, combine lime juice with remaining 14 c oil & 1 t. hot sauce. Add tomatoes, onion, cilantro & oregano & orange sections. Season with salt.
Grill shrimp over hi heat, @ 2 min.
Gently fold avocados into orange salad & serve alongside shrimp
