Fettucine with Garlicky Creamed Spinach

Ingredients
- 2 cups dried fettuccine
- dash olive oil
- 2 tbsp butter
- 3 cloves garlic, crushed
- 1 lb frozen chopped spinach, thawed and well drained
- 1 1/2 cups light cream
- pinch freshly shredded nutmeg
- salt and freshly ground black pepper
- 2 oz freshly shredded parmesan cheese, plus extra to serve.

Preparation
Step 1
Bring a large saucepan of water to a boil and add the fettuccini with a dash of olive oil. Cook for about 8 minutes, stirring occasionally, until tender. Drain and set aside, covered, to keep warm.
Melt the butter in a skillet and saute the garlic for 1 to 2 minutes, then add the spinach. Cook over medium heat for about 5 minutes, stirring frequently, until the moisture has evaporated.
Add the cream and nutmeg and season with salt and freshly ground black pepper. Toss in the fettuccini and parmesan cheese, stir and cook for a final minute. Serve with extra parmesan cheese.
