Ingredients

  • 2 c shredded zucchini
  • 1/4 c shredded onion
  • 1/2 c panko bread crumbs
  • 1 egg
  • 1/4 tsp kosher salt
  • 1/4 tsp baking powder
  • 2 Tb olive oil

Preparation

Step 1

Strain zucchini and onion in a salad spinner to remove excess moisture. Transfer vegetables to a large bowl, stir in panko.
Whisk egg, salt and baking powder together in a small bowl; stir into zucchini mixture.
Heat oil in a nonstick skillet over medium heat. When oil is hot, drop 1/3 c of batter into skillet.
Fry until golden about 4 min per side.
Transfer to a paper towel lined plate
