Stir-fried Pork Soup

Ingredients
- 2/3 lb. boneless pork loin, cut into thin strips
- 1 c. sliced fresh mushrooms
- 1 c. chopped celery
- 1/2 c. diced carrots
- 2 tbsp. veg. oil
- 6 c. chicken broth
- 1/2 c. chopped fresh spinach
- 2 tbsp. cornstarch
- 1 egg, lightly beaten
- pepper to taste

Preparation
Step 1
In a 3qt. saucepan, stir-fry pork, mushrooms, celery and carrots in oil till pork is browned and veggies are tender. Add broth and spinach. Combine corn starch and water to make a thin paste; stir into soup. Return to boil/ boil for 1 min. Quickly stir in the egg and add pepper. Serve immediately.
