Sesame Shrimp with Cilantro-Lime Sauce

Ingredients
- 6 T. white sesame seeds, toasted
- 1/2 C. mayonnaise
- 2 T. finely chopped cilantro
- 1 T. fresh lime juice
- 2 t. soy sauce
- 1/2 t. sesame oil
- 1/4 t. cayenne pepper
- 2 scallions, finely chopped
- 1 lb. medium uncooked shrimp, peeled and deveined
- 2 T. vegetable oil
- 1/4 t. kosher salt
- 1/8 t. fresh ground pepper

Step 1
1. Heat the oven to 400 degrees and arrange rack in the middle. Line a baking sheet with foil; set aside. Place the sesame seeds on a plate; set aside. Combine the mayo, cilantro, lime juice, soy sauce, sesame oil, cayenne, and scallions in a medium bowl, set aside.
2. Place the shrimp in a large bowl, add the vegetable oil, salt, and pepper, and toss to coat. Dip one side of each shrimp in the toasted sesame seeds, skewer, and place on the prepared baking sheet, seed side up. Bake until shrimp are firm to touch, about 5-7 minutes. Serve immediately with the dipping sauce.
