Ingredients

  • 1 ) 2 large onions, chopped Edit Delete
  • 2 ) 2 pounds white button mushrooms (sliced) Edit Delete
  • 3 ) 2 sticks butter Edit Delete
  • 4 ) 2 1/2 cups chicken broth Edit Delete
  • 5 ) 3 cloves crushed garlic Edit Delete
  • 7 ) 3 large potatoes (peeled, cubed and cooked) Edit Delete
  • 8 ) salt & pepper to taste Edit Delete
  • 9 ) 1 cup heavy cream

Preparation

Step 1

Saute mushrooms and onions in butter until slightly browned over medium heat. Add broth and simmer for 2 to 3 minutes. Add garlic and simmer over low heat. Add cooked potatoes and simmer until potatoes are heated through. Add cream and heat to desired temperature. For a heartier soup add cooked cubed chicken. For a pretty presentation after soup is in bowl, top with a dollop of sour cream and chopped chives.
