- 4 large swiss chard leaves
- 1 1/2 pounds pork loin cut crosswise into 1/3 inch cutlets
- salt
- EVOO
- 12 scallions, white and light green parts only, cut into 1 inch lengths
- 1 whole dried chile pepper crumbled or heaping 1/4 tsp of red pepper flakes

pound pork into 1/16 inch thickness between 2 sheets of plastic wrap. lightly season with salt, arrange 1 piece of chard on each piece of pork, roll tightly starting from short side, secure with wooden pick
Large nonstick skillet hear oil over med-high heat, add rolls, reduce heat to medium and cook, turning rolls until brown on all sides. 1-2 minutes. add scallions, chile and 2 tablespoons of water, reduce to low and cook covered until pork cooked thugh, about 8 mins.
