Lemon Ginger Chicken Lettuce Wraps

Ingredients

  • 2 tbsp. vegetable oil
  • 1 lb. ground chicken
  • 1 pouch Club House Lemon Ginger Beef stir-fry mix
  • 2 1/2 cups diced mushrooms
  • 1 cup each low sodium chicken broth and water
  • 1 tbsp. sliced green onions
  • 12 lettuce leaves (Iceberg, Boston)

Preparation

Step 1

Heat oil in large skillet over medium-high heat. Brown ground chicken 3-5 mins. Drain oil. Add seasoning and mushrooms. Stir-fry 3 mins. Add stock and water. Stir together cornstarch and soy sauce. Add to pan along with sliced green onions. Cook 2 mins. or until sauce is thickened, stirring occasionally. To serve, roll meat mixture into lettuce leaves.
