Ingredients
- Dressing:
- 2 cups cooked corn (cut from the cob or frozen)
- 1 avocado, cut into 1/2-inch pieces
- 1 pint cherry tomatoes, halved
- 1/2 cup finely diced red onion
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- 1 tbsp fresh lime juice
- 1/2 tsp grated lime zest
- 1/4 tsp salt
- 1/8 tsp pepper

Step 1
Combine the corn, avocado, tomatoes, and onion in a large glass bowl while the corn is still hot.
Whisk together the dressing ingredients in a glass bowl or measuring cup. Pour over the salad and stir gently to mix.
