Greek Salad Potato Salad

  • 7 potatoes
  • 1/2 chopped cucumber
  • 1 clove garlic, minced fine
  • 1/4 cup yogurt
  • 3 tblsp feta cheese
  • 1 tsp Greek seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup minced onion


Servings 8


Step 1

Cook potatoes in water until tender. Drain and chill. Cut into small cubes and combine with the rest of the ingredients. Chill at least one hour. Place potato salad in the middle of a large lettuce lined platter and surround with beets, greek peppers, cherry tomatoes, sliced onion rings, greek olives and shrimp and anchovies if desired. Sprinkle entire platter with 1/4 cup of the olive oil to which salt and freshly ground pepper has been added.
