Ingredients

  • 3-4

    quarts chicken broth

  • 2

    boneless skinless chicken thighs or 1 large chicken breast, cut into bite sized pieces

  • 4-5

    garlic cloves, minced

  • 1

    medium onion, diced

  • 2

    bags fresh spinach OR 1 box frozen spinach, thawed

  • 1

    can sliced mushrooms

  • 1

    can Great Northern beans, drained and rinsed

  • 1

    can Butter beans, drained and rinsed

  • Grated Parmesan cheese

Directions

In large saucepan cook chicken in broth until no longer pink. Add garlic, onion, spinach, mushrooms and beans. Simmer 30 minutes. Add pepper to taste. Sprinkle with Parmesan cheese. Serve immediately.
