Italian Sausage Stuffed Zucchini

Ingredients

  • 1-1/4 c marinara/spaghetti sauce
  • 4 medium zucchini
  • 1/2 onion-diced
  • 3 cloves garlic-minced
  • 14 oz italian sausage
  • 1/2 c mozarella-shredded
  • 8 t parmesan-grated

Preparation

Step 1

Bring a large pot of water to a boil and set oven to 400 degrees

*cut zucchini lengthwise and scoop out insides to within 1/4" of sides-do not discard
*drop zucchini halves into the boiling water and cook 1-2 minutes-remove
*put 1/4 c marinara in the bottom of a 9x13 and place zucchini, cut side up, in the pan
*in a large skillet, brown sausage then set aside. Heat more oil if necessary and add onion & garlic-cook 2-3 minutes. Add zucchini that was scooped out of the shell, season with salt and pepper and cook 2-3 more minutes. Put sausage back in skillet to heat through and mix well.
*press sausage mixture firmly into zucchini boats, top with sauce, mozarella and parmesan.
*cover with foil and bake for 35 minutes
