Sweet & Smoky Bacon-Onion Marmalade

This amazing sauce is a fantastic addition to anything it touches! Amazing on chicken, burgers, salmon...you name it!!! (*Be sure to try Bacon-Onion Marmalade & Cheddar Toasts)
Ingredients
- 8 Strips Thick-Cut Smoked Bacon, diced
- 2 lbs White Onions, diced
- 1/2 C. Balsamic Vinegar
- 1 C. Red Wine (preferably a Malbec)
- 3/4 C. White Sugar
- 3/4 C. Dark Brown Sugar
- 10 Drops Liquid Smoke

Step 1
Place a pot over med heat. Add the diced bacon bits. Cook till the bacon is crispy. Sift out the bits with a slotted spoon & put aside. Drain the remaining fat from the pot except for acouple Tbsp. Turn up the heat to med-high & add the diced onion. Stir well till the onions turn golden brown. Add the sugar, brown sugar, wine & balsamic vinegar. Cook over med-low heat till it thickens. Start at a higher heat then slowly crank it down till the sauce is quite thick (run a spoon through the mixture; if no liquid fills the void, or if it fills slowly, it's pretty much done. Stir regularly to avoid the sugar burning. Acouple min before it fully thickens, add the bacon bits back into the mixture & add the liquid smoke. Once thickened, remove from heat & pour into jars. Once cooled, seal jars & refrigerate.
