Salmon Burgers w/ Lime Mayonnaise

This recipe comes from my grandma, who also supplied the Salmon Chowder recipe. She really knows her stuff, and her salmon! Finns love fishes!

Ingredients

  • Burgers
  • 1 lb salmon filet, skinned and cut into 1 inch chunks
  • 3/4 cup panko bread crumbs (or bread crumbs of choice, gluten free if necessary)
  • 2 green onions, thinly sliced
  • 2 tbsp snipped fresh cilantro or parsley
  • 2 tsp grated fresh ginger
  • 1-2 cloves of garlic, minced
  • 2 eggs, lightly beaten
  • 2 tbsp reduced sodium soy sauce (gluten free if necessary)
  • 1 tbsp lemon juice
  • 2 tbsp oil - coconut or olive or grapeseed
  • Lime Mayonnaise
  • 1/4 cup mayo of your choice
  • 2 tbsp minced red onion
  • 2 tsp lime juice, freshly squeezed

Step 1

Burgers
1. Place salmon in food processor, cover and pulse about 7 times to coarsely grind, set aside.
2. In a large bowl, combine remaining ingredients, except oil! Add salmon and stir to combine.
3. Line a tray with parchment paper or foil. Make patties from 1/3 cup portions of the salmon mixture. Place on tray, cover with plastic wrap and chill for 30 min (up to 8hrs).
4. When ready to cook burgers, heat oil in large skillet over medium-high heat. Cook for 4-5. minutes per side until browned. A thermometer will read 160F.

Lime Mayonnaise
1. Combine all ingredients and chill until ready to serve with burgers.

A regular bun with some lettuce, perhaps a tomato or some avocado will pair nicely with these burgers. Serve them bun free, wrapped in lettuce leaves for a low carb version. A light spinach and arugula salad with blueberries, walnuts and goat cheese would pair well.
