Carrot Zucchini Muffins

Ingredients

  • 1-1/2 cup flour
  • 1/4 cup wheat germ
  • 1-1/2 tsp baking powder
  • 1 tsp cinnamon
  • 6 Tbsp Sugar
  • 1 egg lightly beaten
  • 1 egg white lightly beaten
  • 1/2 tsp vanilla
  • 3 Tbsp vegetable oil
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup raisins
  • 1/2 sunflower seeds(optional)

Preparation

Step 1

Preheat oven to 375
In a large bowl combine first 5 ingredients

In another bowl mix next 4 ingredients combine well

Add the carrots and zucchini, raisins and sunflower seeds

Add to dry ingredients but do not overmix

Spoon into greased muffin tins and bake for 22-25 minutes
