Bacon and Cashew Caramel Corn

Ingredients
- Popped corn
- 1/2 c cashews
- 6 oz bacon, chopped
- 1 t kosher salt
- 1/4 t cayenne
- 1/4 c heavy whipping cream
- 1/1 /2 c sugar
- 1 / c water
- 2 T light corn syrup

Step 1
Crisp bacon. Drain. Add bacon and cashews to popcorn, in large bowl. Sprinkle with salt and cayenne. TOss to coat. Bring cream to boil. Remove from heat. Line baking sheet with foil and spray with PAM. Stir sugar, water and corn syrup over low heat until sugar dissolves. Increase to high heat. Boil until syrup turns amber (takes about 13 minutes). Remove from heat and add cream...be careful, it will bubble. Stir to blend. Drizzle over popcorn mix and toss with spoons that have been sprayed with PAM. Place corn in oven, toss occassionally, for 20 minutes. Cool completely. Break up clumps.
