Ingredients
- Salsa:
- 14 oz. sweetened condensed milk
- 4 oz. key lime juice
- 3 egg yolks
- 3 egg whites
- 4 tsp. sugar
- 1 cup graham cracker crust
- 1 kiwi
- 1/4 pineapple
- 1/2 mango
- 6 strawberries
- 1/2 cup white rum
- 1/2 cup simple syrup
- 2 mint leaves

Step 1
Whisk together condensed milk, juice and yolks. Make meringue with whites and sugar, fold into mixture. Place crust into a rectangular terrine mold and add parfait mixture and freeze. When solid, make another meringue, dollop on top of frozen parfait. Quickly brulee meringue with propane torch, return to freezer.
Dice fruits for salsa into small chunks. Reduce rum and syrup by 1/2, cool. Toss chiffonade of mint, fruit and syrup, place on top of slices of key lime parfait.
