Broccoli and Pearl Onion Casserole

  • Topping:
  • 2 c milk
  • 1/4 c flour
  • 1/4 c butter
  • 3/4 t salt
  • 1/2 t pepper
  • 1 c gruyere cheese
  • 1 c sour cream
  • 8 c broccoli florets
  • 8 oz pearl onions
  • 3/4 c bread crumbs
  • 1/4 c butter, melted
  • 2 T parsley



Step 1

Make cheese sauce: heat milk, flour, butter, salt and pepper in 2 qt saucepan, stirring constantly. boiil and stir 1 minute. Stir in shreddedcheese until melted,; stir in sour cream

Heat water to boiling in another saucepan. Add broccoli,k cook about 5 minutes. Remove with slotted spoon and drain well. In same saucepan with boiling water, cook onions about 2 minutes, drain and peel. Spoon broccoli and onions into shallow 2 qt baking dish. Pour cheese sauce over vegetables in medium bowl., mix melted butter and bread crumbs; spoon over broccoli mixture. Bake uncovered at 350 15-20 minutes. Sprinkle with bread crumbs.
