Minced Garlic
Salt
Pepper
Olive Oil

Preparation

Step 1

Make ½ inch X on meat. Mix all ingredients together and marinate over night. Cook fatty side up on roasting pan. Multiply the total roast poundage by 5 minutes. Bake at 500 degrees. Do not open oven door for 2 hours. Should be cooked to medium rare 145 degrees.
