Ingredients
- 1 Pounds Carrots Peeled & Quartered
- 1 Pound Potatoes Peeled & quartered
- 2 Medium Onions peeled & quartered
- 2 Zucchini
- 4 Cloves Garlic peeled & crushed
- 2 Tablespoons Olive Oil
- 1/2 Thyme & Rosemary
- 1/2 Teaspoon Salt
- Ground Pepper to taste
- 1 Teaspoon fresh lemon juice

Preparation
Step 1
Pare and quarter all vegetables. In a large bowl mix together garlic,olive oil,thyme,rosemary,salt,pepper
and lemon juice and mix together until combines. Add pared vegetables and stir until well coated. Pour
into large roasting pan and cook @400 degrees until vegetables are tender and well browned.Stir vegetables
every 20 minutes. Serve Hot!
