Ingredients

  • 1 Pounds Carrots Peeled & Quartered
  • 1 Pound Potatoes Peeled & quartered
  • 2 Medium Onions peeled & quartered
  • 2 Zucchini
  • 4 Cloves Garlic peeled & crushed
  • 2 Tablespoons Olive Oil
  • 1/2 Thyme & Rosemary
  • 1/2 Teaspoon Salt
  • Ground Pepper to taste
  • 1 Teaspoon fresh lemon juice

Preparation

Step 1

Pare and quarter all vegetables. In a large bowl mix together garlic,olive oil,thyme,rosemary,salt,pepper
and lemon juice and mix together until combines. Add pared vegetables and stir until well coated. Pour
into large roasting pan and cook @400 degrees until vegetables are tender and well browned.Stir vegetables
every 20 minutes. Serve Hot!
